This delicious dish can be served as a lunch or light dinner option – I bought this beautiful salmon piece from the Good Food Company as they have their new range of Okiwi Bay Pure NZ Salmon in store.

This piece was the oriental flavour of orange, wasabi, ginger and lemon grass, but I also tried the Portuguese salmon that was just as tasty.

Salmon and Autumn Salad

1x Piece of hot or cold smoked salmon

Place on a plate with the salad beside.

Autumn Salad

Fresh rocket leaves or baby rocket bagged

Diced tomatoes

Sliced spring onions

Shaved parmesan cheese

Toss together and dress with balsamic glaze or olive oil and lemon juice
