Lentil Soup

Serves six

Preparation time: 15 minutes

Cooking time: 30-45 minutes

Ingredients

1 cup of dry brown lentils or 2 x canned lentils (if using dry lentils soak overnight in water)

1 celery stick, diced

1/2 onion, diced

1 tablespoon dry chicken stock

3 garlic gloves, crushed

1 carrot, diced

2 tablespoons of parsley, finely chopped

6 cups of water

1 large potato, peeled and diced

1 teaspoon salt and pepper

2 fresh tomatoes diced (or 1 cup of canned tomatoes)

1 cup cooked pasta – set aside (risoni or rice)

Grated Parmesan to serve

Method

When using dry lentils you need to soak them either overnight or in the morning before you head out the door. Allow for approximately 8 hours soaking. You will notice that they will increase in size. To soak, cover your one cup of lentils with water and leave soaking. Before you use for this dish drain and set aside.

If using canned lentils drain the brine, set aside.

In a crock pot or large pot add all the ingredients. Stir and simmer on low for 30-45 minutes until reduced and lentils have become soft.

Before serving add one cup of cooked pasta. Serve with grated Parmesan cheese.

If using a crock pot, allow this to cook on low all day. Before serving add pasta or rice.
