This is a light tasty and quick evening meal option. You can mix and match what vegetables you will use for this dish as long as they are fresh and cooked at a high heat quickly to retain colour and nutritional value. Black satin glazed chicken with fresh vegetable stir fry
2x Organic chicken breast (I use Harmony Foods from The Good Food Company)
4-6 Tablespoons Herb&Spice Mill Black Satin Glaze (The Good Food Company)
Marinate whole breasts for at least two hours then slice in 2cm slices and stir fry in a lightly oiled pan or on a baking sheet in fry pan.
Vegetables:
Lightly stir fry over a high heat one red onion sliced into wedges, add one carrot cut into sticks, stir fry with a splash of water and cover with a lid for two minutes.
Take off lid and add two cups broccoli florets, two sliced zucchini's, and a handful of green beans. Stir fry with lid off for 2-4 minutes and add one cup of snow peas.
Place vegetables on a plate and add chicken and glaze juice over the top and sesame seeds, season with salt and pepper. Enjoy!
