Some of you may have read about the bunny rabbit cake I was making for my daughter's birthday where I used the chocolate brownie recipe for the cake.
Well it was a hit – everyone just loved it. I wanted to carry on the theme and make an impressive centrepiece for the children to remind them of Easter and so created the cupcake tower. My son Marco came up with the colours and we made this as an extra special surprise for Bianca the birthday girl. If you could have seen all the wee faces when they had seen the tower – priceless. I made extra so each could choose one they would like to take home as a treat. Even the grown-ups got stuck into them.
Follow a basic cup cake recipe
Icing ingredients
250g soft butter
4 cups icing sugar
Food colouring
Water
Toppers and accessories
Mini or large paper cup cake holders
Mini chickens (purchased from the $2 shop)
Mini eggs
Jet plans
Lolly pops
Mini umbrellas
Method
Cream butter, add icing sugar in stages until mixed. Add tablespoons of water at a time to help bind the mixture. The great thing is if you add too much water you can simply add more icing sugar. Split the mixture into portions you would like to colour. Pipe each colour and decorate with Easter treats.
