Long hot sunny days are there to be enjoyed, so planning easy meal options is essential. Bel Mondo in St John Street has loads of ideas and the ingredients to create awesome easy dishes.

I really enjoyed the peppered pancetta, crusted belly pork. I threw together lots of fresh salad ingredients from the in-law’s garden and arranged it on a large white platter. I thinly sliced and lightly fried the pancetta and tossed it through the salad. The result was a spectacular looking meal created in five minutes flat. The pancetta was very reasonably priced at $6.50 and was enough to serve three of us.

The other product I found as a very useful tasty addition to my antipasto platter was the chorizo Pamplona extra – a definite taste of Spain, again, very reasonably priced and quite a different flavour from salami.
